Every evening the Atlantic catches fire behind the Mogador archipelago. La Coupole’s terrace faces due west: it is one of the few places in Essaouira where you dine looking straight at the falling sun. Arrive an hour before sunset, order a Maiden Voyage, and let it happen.

The lightest footprint we can manage

Reclaimed timber, organic paints, local produce in season, biodegradable straws, water microfiltered on site instead of single-use bottles, systematic waste sorting. Sustainability is not a marketing line here: it is how the place was built.
