La Coupole, a house on the corniche

Opened in March 2019 and fully redesigned since, La Coupole is an arty, eco-minded place set on the northern corniche of Essaouira, facing the Atlantic and Mogador island.

Inventive cooking, land and sea

La Coupole’s menu is Mediterranean, French-Moroccan, and deliberately short: what is fresh, what is in season, what comes from here. Fish arrives from Essaouira harbour, saffron from Taliouine, amlou and argan oil from the hinterland.

The bar follows the same logic. Eight signature cocktails created on site, house infusions, clarifications, banana or pear cordials, and a wine list where Morocco stands next to the rest of the world.

I wanted a place that looks like Essaouira: open, built with what is at hand, turned towards the ocean. Not a set. A living place.

The décor

A décor that was built, not decorated

Driftwood collected on the beach, reclaimed timber, organic paints, tropical plants, tribal fabrics and patterns: the full renovation was carried out with natural materials and a real energy constraint.
